About this honey

Sun-dried Ugandan orange peel rested in raw West Nile honey gives this jar the character of a fine marmalade: sweet, gently bitter, and fragrant with real orange oil.

It is the baker’s and bartender’s jar: at home in cakes, glazes, and a very good old fashioned. Like all our infusions, the flavour comes from the whole fruit, never from flavouring.

Fresh orange zest, dried slowly to concentrate the oils without cooking them.

The peel rests in raw honey for weeks while the citrus oils infuse. No heat is ever applied.
